Whole Wheat Banana Blueberry Muffins
yields 10 muffins
1.5 cups whole wheat pastry flour
3/4 cup cane sugar
3 tbsp butter
1 egg + 1 egg yolk
1 banana, mashed
1.5 tsp baking soda
1/2 tsp sea salt
1 tsp cinnamon
2 cups fresh blueberries
1/3 cup soymilk or milk
Preheat your oven to 375.
In a small pot on the stove, melt the butter then remove the pot from the burner. Add the soymilk, the egg, the yolk and mashed banana and whisk well. Set aside.
In a large bowl, combine the flour, baking powder, cinnamon, sugar and salt. Add the wet ingredients and stir only until incorporated. Fold in the blueberries gently.
Spoon batter into 10 greased muffin tins. Bake for 25-30 minutes or until golden brown.
